[CHRISTMAS-RECIPE] Cranberry Pecan Delights---Cookies with Orange

CRANBERRY PECAN DELIGHTS

2 cups flour
3/4 cup sugar
3/4 tsp salt
1/2 tsp baking soda
1/4 cup olive oil
1/4 cup unsalted butter, melted
1/2 cup orange juice
1 egg
1 cup dried cranberries
1/2 cup chopped pecans
1 1/2 tsp grated orange rind

Heat oven to 400 degrees.* Coat 3 baking sheets with cooking spray. Whisk first 4 ingredients in a bowl. Set aside. In 2nd bowl, beat oil, butter and juice 2 min. Beat in egg. Beat in flour mixture until blended. Add cranberries, pecans and rind. Beat 1 min.

Drop by tablespoonfuls onto baking sheets. Bake 10 min. or until firm and golden around edges. Cool cookies. MAKES 3 DOZEN COOKIES.*
