[CHRISTMAS-RECIPE] GERMAN CHOCOLATE COOKIES

GERMAN CHOCOLATE COOKIES

Cookies:

1&3/4 cups all purpose flour

1&1/2 cups granulated sugar

3/4 cup unsalted butter, softened

2/3 cup unsweetened cocoa

3/4 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

2 tablespoons half and half

1 teaspoon vanilla extract

Filling:

1/2 cup (1 stick) unsalted butter

1/2 cup brown sugar

1/4 cup light corn syrup

1 cup coconut, toasted

1 cup pecans, chopped

Preheat oven to 350 degrees F.

Combine all cookie ingredients and blend. Form into 1 inch balls and
place on ungreased cookie sheet. Bake 8-9 minutes.

In medium saucepan, melt butter, add sugar and syrup stirring
constantly until thick and bubbly. Stir in coconut and pecans.

Make cookie sandwiches with 2 cookies and filling.
